Apple Cherry Cobbler Pie

Ready-made pie crust filled with filling prepared from sugar, cornstarch, ground cinnamon, almond extract, tart apples, and well drained tart red cherries. Filling topped with mixture of flour, sugar, butter, almond extract and egg. Pie baked until topping was is golden brown and filling is bubby.

Ingredients -
1 Pastry Crust for 9” Pie

Filling:
1/2 cup Sugar
1/4 cup Cornstarch
1/2 teaspoon Ground Cinnamon
1/4 teaspoon Almond Extract
5 cups thinly sliced peeled Tart Apples (granny smith gala, or pippin)
1 can Tart Red Cherries, well drained

Topping:
1 cup All-Purpose Flour
3/4 cup Sugar
1/3 cup Butter
1/2 teaspoon Almond Extract 1 Egg, well beaten
 
Preparation:

1. Place baking sheet on bottom oven rack.

2. Preheat oven to 375 F.

3. Add sugar, cornstarch, ground cinnamon, almond extract, tart apples, and well drained tart red cherries to large mixing bowl. Stir to combine.

4. Place pie crust into pie plate. Spoon pie filling into bottom of pie crust.

5. Add all-purpose flour, sugar, butter to medium mixing bowl.

6. Combine ingredients using pastry blender or fork, until butter cut into flour resembles coarse crumbs.

7. Stir in almond extract, and beaten egg.

8. Spoon topping evenly over filling.

9. Bake, uncovered 20 minutes to brown topping.

10. Cover top of pie with foil to prevent over browning. Bake 30-40 minutes.

11. Remove pie from oven. Place pie plate on wire rack. Cool 1 hour.

Cherries are generally small, deep red to almost black in color, with firm shiny skin. Wild cherries and sour cherries are generally the two types most commonly found in supermarkets.
